Man Cheuam (Thai-style Steamed Cassava) Recipe

Man Cheuam is a typical Thai-style steamed tapioca (cassava) dessert that comes with Coconut Cream. Besides Red Ruby, it is also one of my favourite and must-have desserts when dining in a Thai eatery or restaurant if they offer it.

Man Cheuam (Thai-style Steamed Cassava)

Ingredients:
500gm Tapioca, peeled and cut into 5cm length
1/2 cup White Sugar
1 cup Warm Water

Method for Tapioca:
1. Steam the peeled tapioca in a preheated steamer for 30-45mins until translucent and soft when pricked with a skewer.

2. Put the sugar and water in pot and bring to boil until sugar is dissolved.

3. Put in steamed tapioca and simmer for 5 mins, turning frequently to ensure all sides are well coated with the sugar syrup.

4. Remove tapioca and place on serving plate. Drizzle with coconut cream and serve warm or chilled (drizzle coconut cream when ready to serve).

Coconut Cream:
200ml Coconut Milk.
pinch of Salt.
2 Pandan Leaves, tear the edges slightly to release fragrance and knot them together.
2 tsp Tapioca Flour.

Put all ingredients into a saucepan and bring to boil on medium low till the coconut milk thickens.
